Master Class

We have created our Master class course for helpers that display superior cooking qualities.  This course is designed to take your helper to the next level by honing their skills and concentrating on complicated cooking techniques.

It is strongly advised that participants have completed Basic and Intermediate levels.
Master Class Week 1

class 1 - Canapés and Starters

 
  • Spinach and Feta Triangles - crunchy Geek-style filo parcels oozing in flavour
  • Smoked Salmon Avocado Cornettes - topped with micro herbs and served on crisp brioche
  • Mini Goats cheese Antipasto Galettes - golden pastry topped with homemade antipasto.
  • Dukkah Prawns with Minted Yoghurt Tahini Sauce - Middle Eastern spiced prawns served with a creamy tahini, yoghurt sauce
  • Chicken and Sundried Tomato Meatballs with Creamy Mustard Dipping Sauce and Fettuccine
Master Class Week 2

class 2 - Soufflés and Tarts

 
  • Twice Baked Goats Cheese Soufflé - the perfect starter with a scrumptious hazelnut salad
  • Chocolate Soufflé - the essential dinner party dessert
  • Potato, Anchovy and Rocket Tart with Salsa Rossa - wonderful rustic savoury tart
  • Vanilla Tartlets with Strawberry Coulis - mini tartlet's filled with vanilla crème, topped with strawberry coulis
  • Apple Tarte Tartin - traditional French apple Tart
Master Class Week 3

class 3 - Perfecting Roasting

 
  • Mediterranean Stuffed Beef with Jus - stuffed with spinach, feta and sundried tomatoes, rolled in prosciutto.
  • Duck A L'Orange - traditional French juicy roast duck with orange and brandy accent
  • Chinese Five Spice Roast Pork with Charred Baby Corn - marinated and fragrant five spice pork
  • Baked Stuffed Whole Snapper - stuffed with herbed pistachio and topped with zest and cranberries
  • Spiced Stuffed Bosco Pears with Honey Orange Sauce - baked with an irresistible crunchy crumble topping.
Master Class Week 4

class 4 - Dinner Party Planning

 
  • Table Settings, Menu Planning and Preparation - learning the organisation skills for a no hitch dinner party
  • Spiced Apple and Butternut Squash Soup - curry based delicious soup
  • Almond Crusted Baked Goats Cheese and Green Apple salad
  • Salmon Coulibiac - salmon, zesty rice and hardboiled egg enveloped in light pastry
  • Spicy Entertainment Nuts - a combination of salty, spicy and sweet.
