We take the stress out of teaching your helper how to cook your favourite food!

Intermediate Cooking Course

This course is structured for those helpers who are already quite fluent in the kitchen and have some confidence in understanding what Western cooking is all about. This will 'iron out' the remaining few 'hiccups' that you encounter in the kitchen when your helper is not quite at the cooking expertise level you expect.

On completion of this course your domestic helper will receive a certificate and will be able to master the following:
- Create more complex International dishes
- Presentation of meals both for individual dinner party style servings and on serving platters for sharing

We strongly recommend the basic course is completed prior to placing your helper in the intermediate course, but it is not compulsory.
Intermediate Cooking Week 1

class 1

  • Sticky Chicken Skewers with Sweet Chilli Jam - a fabulous tasting sticky, sweet chicken dish great for the whole family or a must have BBQ dish
  • Oriental Pork Salad with Rice Noodles - a delicious appetizer or light meal , that is low in fat without cutting flavour
  • Tangy Spinach and Cranberry Salad with Toasted Seeds - a light refreshing salad which goes with any dish and a great compliment to the sticky chicken skewers
  • Vietnamese Beef and Lettuce Wraps - a delightful dish combining sweet, spicy & salty flavours served as a light lunch or dinner
  • Penne with Salmon and Tomato Cream Sauce – seared flaked salmon in a tomato cream sauce
Intermediate Cooking Week 2

class 2

  • Pistachio (dukka) Crusted Beef Fillet - a great favourite for a dinner party. Tender beef bursting with Middle Eastern flavours
  • Honey Roasted Vegetables with Balsamic - a rustic combination of textures and flavours makes this a vegetable dish to remember served with couscous or with any meat, fish or poultry
  • Salmon Burger with Tangy Tartare Sauce - a delicious alternative to the traditional burger. This fish pattie is loaded with vegetables and beans topped with homemade tartare sauce
  • Chicken Liver Pate infused with Port and Fresh Herbs - creamy and decadent pate complimented with crisp melba toast that can be served as a pre-dinner aperitif or a snack
  • Sesame Slaw - light salad bursting with Asian flavour with a sesame seed accent
  • Sticky Date Pudding with Butterscotch Sauce - a sticky, fluffy date pudding served hot with the decadent butterscotch sauce makes this a must for any dinner party
Intermediate Cooking Week 3

class 3

  • Lemon Thyme Baked Chicken & Potato - tangy and full of fresh thyme, cooked in white wine
  • Roasted Sundried Tomato Salmon - a great dinner party favourite, full of big flavours
  • Lasagne - the whole family will love these layers of deliciousness
  • Spicy Cheesy Twists - crisp puff pastry twist to compliment a drink or a great soup dunker
  • Greek Salad with Feta - chunky salad with creamy feta and a dusting of oregano
  • White Bean Mash – served hot with dinner or as a great appetizer or an after school healthy snack
Intermediate Cooking Week 4

class 4

  • Indian Spiced Chicken Quinoa Pilaf - fluffy slow cooked quinoa and chicken steeped in Indian spices topped with yoghurt riata
  • Thai Beef Stir Fry served with Star Anise Rice - a warm Thai beef salad of sorts. Balancing sweet, spicy and salty. Served on fragrant rice.
  • Chicken and Sweet Corn Soup - created with poached chicken and sesame oil, this soup is a real crowd pleaser
  • Angel Hair Pasta with Lemon Roasted Prawns - tender oven roasted prawns on a bed of zesty angel hair pasta
  • Lemon Baked New York Cheese Cake - rich and delicious baked New York cream cheese cake with a buttery biscuit base
