It's finally here..... after much demand we have developed an advanced Master Class. Challenging recipes, perfecting techniques, CONCENTRATED cooking and GREAT flavours.
This course is exclusively for those helpers who have graduated from both our Basic and Intermediate cooking courses. It is the next step in their culinary journey. Here they will learn more challenging recipes, including more intricate methods and procedures. This will furnish them with the skills to plan, prepare and create gourmet meals not only for your family but for any entertaining you do.
Once your helper has graduated they will be proficient in the following:

Successfully bake soufflés without them collapsing

Understand pastry and tart making techniques

Roast to perfection

Understand all the planning and preparation that goes into hosting a Dinner Party
Week 1:
Canapés and Starters
- Spinach & Feta Triangles
- Smoked Salmon Cornettes with Brioche & Avocado
- Mini Antipasto Tarts
- Dukkah Prawns with Minted Tahini Yoghurt Sauce
- Chicken and Sundried Tomato Meatballs with creamy mustard sauce
Week 2:
Soufflés and Tarts
- Twice Baked Goats Cheese soufflé
- Chocolate soufflé
- Potato and Anchovy and Rocket tart with Salsa Rossa
- Vanilla Tartlets with Raspberry coulis
- Apple Tarte Tartin
Week 3:
Perfecting Roasting
- Mediterranean Stuffed Beef with jus
- Duck A L'Orange
- Chinese Five Spice Pork with Charred Baby Corn
- Baked Whole Snapper with herbed Pistachio stuffing
- Spiced Stuffed Pears with Honey Orange Sauce
Week 4:
Dinner Party Planning
- Table Settings, menu planning & preparation
- Spiced Apple & Butternut Squash Soup
- Crusted baked Goats Cheese and Green Apple salad
